In a deep plate, scatter rocket or lamb’s lettuce, add crushed walnut kernels then fine slices of smoked Magret. Then add fresh or frozen herbs, finely chopped, as well as two shallots, chopped. For the vinaigrette, mix three tablespoons of walnut oil and one tablespoon of raspberry vinegar. Pour the vinaigrette over the salad just before serving. Don’t forget to season with salt and pepper. All that’s left is to garnish your salad with a foie gras block, well chilled and cut into shavings.
How to make foie gras bonbons ?
To make foie gras bonbons, you will need brick sheets, a foie gras block, mango jam and a pinch of curry powder. Preheat your oven to 210 °C (gas mark 7) and cut the brick sheets into squares of approximately 15 cm per side. Fill your squares with a piece of foie gras block of approximately 10 grammes. Then add half a teaspoon of shop-bought mango jam as well as a pinch of curry powder. Fold the pastry sheet into a sweet shape and use kitchen string to hold them firmly in place. Place the bonbons on an oven tray that you have covered with baking paper. Lightly brush with oil and bake them for 3 to 5 minutes until they are golden and crispy. Remove them from the oven, remove the kitchen string and serve them immediately.

For lovers of pasta and foie gras, here is an easy recipe to make but which is very good. To make it, you need 300 grams of pasta, 100 g of foie gras block, a few drops of truffle oil. Start by cooking the pasta in a large saucepan of boiling salted water. Drain it and then pour it into a hot main course. Then add the foie gras block cut into dice. Pour a few drops of truffle oil. Mix well, salt and pepper. All that’s left for you to do is enjoy it with family or friends.
