The Cassoulet de Castelnaudary is a traditional main course from the Sud-Ouest region of France, originating from the town of Castelnaudary. It is a stew of white haricot beans, pork, sausages, duck or goose Confit and vegetables, cooked slowly in an earthenware dish called “Cassole”.
